Background of the Study: Degradation wastes especially fruit waste is important because these accumulate in environment. The can be used to biosynthesize pectinase enzyme at a cheaper rate due its numerous industrial applications. ability Saccharomyces cerevisiae degrade produce was exploited.
 Aim: aim this study isolate and characterize optimal conditions needed for production on orange peel with maize cobs effectiveness enzymes produced extraction juice.
 Place Duration conducted Microbiology Laboratory Abubakar Tafawa Balewa University Bauchi, Bauchi State, Nigeria, between August September 2021.
 Methodology: Soil samples from seller stand collected, serial dilution method reduce solution more usable concentration, were streaked Yeast Peptone Dextrose Agar (YPDA). plates incubated 3 9 days 28+- oC. isolated yeast identified based morphological biochemical test, isolates inoculated prepared fermentation media under different conditions. crude extracted, extracts tested activity using dinitrosalicylic reagent (DNS) presence reducing sugar. resulting determined effectively extract juice mash.
 Results: showed relatively hydrolysis peels as substrate by solid-state predetermined optimum Optimization done altering medium. Pectinase (2.81 + 2.31 ug/ml) observed 72hr incubation 35oC.
 Conclusion: demonstrates that cob successfully induce fermentation.
